Yellow popcorn is more for commercial use like in theatres. It is a larger kernel that produces a fluffier finished product. Because of the larger kernel size, you may notice a little more hull of the popcorn after the product is popped.

White popcorn a smaller kernel when it pops and is a bit more tender than the yellow variety. The white popcorn tends to melt in the mouth more and you will not notice the hull of the kernel as much. White popcorn is used more for gourmet style popcorn batches.
